All parts of the chicory plant are edible, in particular, the roots are cleaned, dried and pulverised to create chicory coffee.

With the Moka coffee maker: fill half the filter with ground chicory without applying pressure. For a less intense drink, reduce the quantity of product in the filter.
For infusion: one tablespoon of ground and toasted chicory for each cup of chicory coffee. Add the chicory to the boiling water, leave to infuse for a few minutes, filter through a sieve.
